Are you finding yourself cooking more at home these days due to today’s current events? Here is a healthy delicious seven layer casserole recipe that I am sharing from my mother in law, M.F. The normal recipe is here below, but I do change mine a little from time to time. I will leave out the corn and add a little more ground turkey meat. The meat I use is ground turkey meat substituted for the ground beef. And, I also use organic or non-gmo tomato sauce.

Seven Layer Casserole without cheese

1 cup uncooked rice
1 cup cooked or canned whole kernel corn
Salt and pepper as you like
2 cups or 1 15 oz. can tomato sauce
3/4 cup water or add a little more so it does not get dry while baking
Finely chopped onion
chopped green pepper
1 cup frozen or can green beans
3/4 pound of ground beef or turkey
1-3 slices bacon- cut pieces

Place rice and corn in baking pan or dish. (Option: eliminate corn, and add more green beans).

Add rest of tomato sauce mixture. Top with bacon pieces. I use a cooking scissors to cut the pieces of bacon over the top of the mixture. Cover tightly, bake at 350 degrees F, for 50 min. to 1 hour. Then uncover for up to 10 minutes on broil (to bake the bacon on top). Keep an eye on it, so it does not over cook or burn on top.

Tasty Tip: Top it with a little mozzarella cheese to spice up your dish!

    1. It is so yummy too, Wendy! We always have some left, so we heat it up for another meal. Its almost like eating leftover pizza, (which is so good).. Thank you so much!

  2. This recipe looks awesome & need it to be GF/peanut free for family. Definitely adding this to my dinner list!

    1. Yes, it is Gluten Free/no peanuts.. I have reaction too, so I cook very clean. Its almost a dish in my opinion that replaces my taste for a pizza,.. that tomato dish. I have not had pizza in 7 years. 🙂
